Welcome to The BBQ BEAST Masterclass  –

This isn’t your average BBQ session, this is about big flavours, fire, smoke and meat cooked the way it was meant to be. Perfect for the red-blooded BBQ fan who loves the smell of smoke in the air, a cold beer in hand, and food that hits hard! 

We’ll dive into the world of serious grilling: thick-cut steaks, smoky ribs, flame-licked shellfish, and sauces that pack a punch. You’ll learn the secrets behind searing, smoking, and charring like a pro all while enjoying a proper day out with fire, food, and a few good laughs. 

If you love meat, smoke and maybe a cold beer, this one’s for you!  (Not just for fellas! Ladies super welcome too!) 

The day will include:- 

Welcome & Fire-Up - The all important preheating of the BBQ properly 

Session 1: The King of Steaks 

  • Choosing the right cut (ribeye, tomahawk, cote de boeuf, sirloin).

  • Reverse sear vs. direct heat.

  • Resting like a pro

Session 2: Smoke & Low’n’Slow 

  • Ribs: Memphis-style dry rub vs sticky glaze.

  • Using vents to control heat.

  • Smoking hacks (wood chips, beer sprays).

Session 3: Shellfish on Fire

  • Smoky prawns with chilli & lime.
  • Cider-steamed mussels straight off the grill.

Session 4: Big Finish 

  • BBQ platter: steak, ribs & shellfish.

  • Killer sauces & sides (beer BBQ glaze, chimichurri, grilled corn).

 

The morning starts with a welcome coffee/tea & cookies from 10.30am and then the class will commence at 11am and will run though until approx 2pm with time for Q&A's over your grilled feast!  Choice of wine/beer or soft drink, coffee/tea included.  Session finishes approx 3pm.
